Greco di Tufo €28 , glass : € 6.00

Villa Matilda Avallone
Villa Matilde Greco di Tufo comes from vineyards planted between 1956 and 1980 at an altitude of between 400 and 500 metres above sea level. These strains are over 40 years old, planted in clay soil and cultivated using respectful agriculture. The work is manual and the machinery used consumes half of what conventional vehicles do. The production yield is limited to 3,000 litres per hectare and the harvest is manual, selecting the grapes in the vineyard itself.
Once the grape is destemmed, it is pressed gently and cold settled. Villa Matilde Greco di Tufo then ferments in stainless steel tanks for about 4 months with its own lees. It is then finally bottled.
Villa Matilde Greco di Tufo is an aromatic white wine with intense aromas of stone fruits, sweet almonds and mineral and citrus notes. On the palate it is fresh, lively and rich. It has a pleasant mid-palate and a persistent finish with mineral touches.

Chablis €35

Jean Paul & Benoit Droin
Jean-Paul Benoit Droin is an ancient winery in Burgundy run by Jean-Paul and his son Benoît Droin. Together they work the family vineyards that have been passed down from generation to generation since the beginning of the 17th century. They currently own 26 hectares in the renowned Premier and Grand Cru areas. In 1999 they built a new winery on the outskirts of the town of Chablis, where they combine modern and traditional winemaking techniques to express the character of each terroir.
Jean-Paul Droin Chablis comes from old vines planted in shallow soils of gray marl and limestone and lying at an altitude of 130-320 metres above sea level. Conventional agriculture is used with respectful techniques that limit yields and keep away disease. The harvest is carried out manually and early to preserve the natural acidity of the grape.
Jean-Paul Droin Chablis is a white wine from one of Burgundy’s most prestigious wineries. A citric, fresh and balanced Chardonnay that surprises even the most demanding palates.
